Fun Friday: Sugar Cookie Bars

I’m not sure what the weather is like where you are, but down here it’s pretty stormy and looks like it will be like that all weekend. Most people love the sunny days of summer, but this pale girl LOVES a good thunderstorm! I could sleep all day when it’s raining…if the kiddo would let me πŸ˜‰

Well this little recipe is sure to brighten up your Friday…or any sunny or rainy summer day for that matter! My younger sister requested that I make these for her a few weeks back, shortly after I pinned it on Pinterest here. I think she had a brain lapse…we now live 100 miles away from her! πŸ˜› BUT a couple of weekends ago, my mom and sis picked me up on their way to New Orleans and we had ourselves a little girl’s trip! (You may have seen one our pics from my last post.) I figured, what better time to make these sugar cookie bars?! These jokers were eaten up in no time! They were definitely a hit and the recipe makes a TON, so be prepared to share!

SUGAR COOKIE BARS

SUGAR COOKIE BAR INGREDIENTS

1 C unsalted butter, room temperature (I always use salted)

2 C sugar

4 eggs

2 tsp vanilla extract

5 C flour

1 tsp salt

1/2 tsp baking soda

DIRECTIONS

1. In a large bowl, cream the butter and sugar together until fluffy.

2. Add the eggs, one at a time. Mix well after each addition.

3. In a separate bowl, mix the dry ingredients together.

4. Add the vanilla to the creamed mixture and then slowly add in the dry mix.

5. Press dough into a greased 13×18 inch pan.

6. Bake at 375 degrees for 10-15 (I think mine was closer to 20, but my oven is a little off.)

7. Allow to cool completely and then frost.

FROSTING INGREDIENTS

1 C unsalted butter, room temperature (again, I used salted)

1 tsp vanilla extract

1/8 tsp salt

4 C powdered sugar

5 Tbsp milk

food coloring (optional)

sprinkles (optional) (the original recipe used the tiny ball sprinkles, but I don’t like the crunch of them, so I used the long multi-colored chocolate ones)

DIRECTIONS

1. In a mixing bowl, beat the butter until creamy.

2. Add the vanilla extract and powdered sugar.

3. Add 1 Tbsp of milk at a time until you reach your desired consistency.

4. (Optional) add your food coloring! Sis wanted turquoise!

5. (Optional) add your sprinkles! I pressed them down just a tad to make sure they wouldn’t go rolling everywhere when it came time to eat the bars.

6. Place in refrigerator to chill before cutting.

7. Remove and cut! I preferred to keep mine refrigerated, but I don’t think you have to. The frosting will soften back up if you leave out though.
